Quick, cheap and easy Nachos are a great pre-dinner snack or meal for one. I am not trying to pass this off as a culinary first, it’s basically just a bag of crisps with cheese on top but maybe it’ll serve as a little inspiration on one of those ‘I don’t know what to eat’ nights. Whenever my boyfriend goes away for the weekend I’ll treat myself to a big ol’ plate of Nachos, a glass of red wine and whatever crappy TV he won’t let me watch when he’s here. Bliss.
Serves 1 hungry person or 2/3 snackers
3/4 bag of Doritos (I like the Cool flavour but it’s up to you, Cheese and the red ones are tasty too)
200g cheddar
50g mozzarella
Salsa (either buy a pre-made pot or whiz up your own)
Jalapeno peppers
Cover a large plate with Doritos and sprinkle a little of your cheddar cheese over it. Splash a little salsa on too and a couple of jalapeno peppers. Layer on another sprinkling of Doritos, cheese, salsa and jalapenos. Keep going till you’ve used up your crisps.
Finish with any leftover cheddar and all of the mozzarella as well as the jalapenos. Dollop salsa around the edges of the plate and pop under the grill.
It will only need a few minutes and will burn quickly so keep an eye on it!
