If like me you enjoy a simple meat and two veg kind of dinner once a week you’ll love this easy peasy twist on your pork chops. With just a handful of spices and some brown sugar you can create this sticky, sweet and a little bit spicy glaze that works brilliantly with tomatoes and root veg.
Makes enough for 4 but in my house, 2!
4 pork chops (I prefer boneless)
1/4 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chilli powder
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
Mix all of your dry ingredients together, getting rid of any lumps with a spoon.
Sprinkle half of the mixture on to your pork chops and rub in. A lot of it will dissolve in to the chop. Turn over and do the same to the other side.
Drizzle olive oil in to a frying pan and turn up to a medium heat. When the olive oil has started to wiggle pop two of your pork chops in.
Fry on each side for 2-3 minutes. When you turn your chop over it will look a little burnt – this is just the brown sugar. You can run a spoon along the ‘burnt’ bits straight after it comes out of the pan if you want to get rid of it.
Now pop your chops in an oven-proof dish for five minutes to ensure they’re cooked through properly.
Serve with a spoonful of the oven dish juice.
Psst… We had this last night with baked tomatoes with pesto and a handful of sweet potato chips. Highly recommended!
