Enough for 3-4 (with rice or in wraps)
5 strips belly pork (Tesco now do a pack or ask your butcher)
3 tablespoons honey
2 teaspoons chilli flakes
3 garlic cloves (finely chopped or pushed through one of those crush-y things)
4 tablespoons soy sauce
Place your pork slices in a casserole dish and season both sides well with the honey, chilli, garlic and soy sauce. Really get in there with your hands and make sure it’s covered.
Put the lid on and leave to marinade in the fridge for as long as you can. Overnight is best but I only left this batch for an hour or so and it was still very tasty.
Cook in the oven at around 180 for 1 & 1/2 hours. Turn occasionally and be really careful as it will spit!
Turn the oven up to around 200 and cook for a further 30 mins without the lid on. I like to turn the grill on for the last 10 mins just to crisp up the edges.
Serve with rice or in one of these tasty wraps.
