Writing this I realise that even my salad-y type dishes involve a bit of meat – I am a meataholic! Often a home-made meal doesn’t feel right to me without at least a slither of the hard stuff, I promise to do something a bit more veggie-friendly soon though! Anyway, I digress. This week we recreated a salad Alex bought one very warm, hungover day recently. He had to take a long train journey and was not feeling his best and he reckoned the salad of watermelon, serrano ham and feta got him through. Which was obviously enough to convince me I needed such a dish in my day-after-the-night-before food arsenal. Sometimes even a bacon and brie sarnie doesn’t cut it. Sometimes..
Makes enough for 2 as a main (you might want a bit of bruschetta / olives or something to bulk out your dinner)
You’ll need:
Bag of rocket (I’m sure spinach or lamb’s lettuce would make a good alternative)
2 cups watermelon chunks
3 slices parma ham / prosciutto
A little feta
Balsamic vinegar
Olive oil
Pinch of sugar
To make:
Start my making the dressing – two tablespoons of olive oil and two teaspoons of balsamic vinegar mixed with a pinch of sugar. This will start to separate a bit so give it a final stir just before your use it.
Pop your leaves in a bowl along with your watermelon chunks and cut-up ham. Give it a good toss and then drizzle over the dressing. Mix again to make sure everything is covered and top with feta. It’s that simple!
Psst…This is a healthy-portion and perfect for dinner but if you’re particularly hungry (as we always are!) team it with some bruschetta or olives and sun-dried tomatoes.
